Seafood is perhaps the easiest food to overcook, which is why many don’t dare reheat their leftovers. While it’s true it will never be as good as it was the first time, it is possible to reheat fish without completely sacrificing taste or texture. Billy’s Seafood in Bon Secour, AL, is the area’s go-to seafood market, carrying just about everything that swims in the Gulf. Their team explains how to reheat fish properly.

Oven

If the fish is breaded, set the oven to 375 degrees Fahrenheit. Lightly oil a dish or pan and arrange the fish in a single layer. Leave it uncovered, and bake for 12 to 15 minutes, or until the coating is crisp and the internal temperature reaches 165 F. Turn the fish over halfway through for even cooking. For unbreaded fish, preheat the oven to 325 F and prepare a pan as you would for breaded, but cover with foil before baking. Cook for about 15 to 20 minutes and check for an internal temperature of 158 degrees Fahrenheit.

Microwave

It’s important to exercise extra caution when using this method, as different microwaves have different heating speeds. Turn the power down to 30 or 40 percent at most. Arrange the fish in a microwave-safe dish and heat for 20 seconds. Check and rearrange, flipping the fish over if necessary. Microwave for another 15 seconds and check again. It may take several turns, but after a few cycles, your fish will be just warm enough without having lost too much moisture or texture.
